Making Butter for the First Time

Jan Robertson, of War Eagle Creek Farms in NW Arkansas, made butter for the first time and took pictures of the process.  Her cream came from Seven Doves Creamery in Mena, Arkansas.  Jan purchased the cream through ASN Food Club.
Use the wire whisk attachment on a Kitchen Aid mixer, turn to speed 2. It took about 20 minutes.

{You can also do this in a blender in less than five minutes.  Just be sure to watch the cream carefully.  When the cream starts to "come together" pulse the blender on and off, so as not to over blend the butter.}

Butter appears!

Left: Butter draining through a cheese cloth.
Right: buttermilk
{If you want to culture your buttermilk read this.}
In 2 cups of water dissolve 1/2 teaspoon of salt.  Use a spatula to stir and mash the butter to remove as much buttermilk as possible.  Rinse butter in this solution, two times.

Drain the salt water from the butter.  Press out remaining liquid with a spatula.

Ever purchased butter from the grocery this pretty and yellow?

It is evident the cows at Seven Doves Creamery have plenty of green grass from our wet summer. The bright yellow butter is proof that grass fed cows produce superior products which translates to more vitamins and nutrients when consumed by people.

Thanks, Jan, for sharing your pictures and experience with us!

  1. I am so glad to find you. I live near Fort Smith, and don't know anyone else around here that is trying this "real food" stuff. It's good to know someone near (well--at least in the same state) is trying this too.

  3. Another method, and a way to kill two birds with one stone (burning energy in active kids), is to put the cream into a jar with a couple of clean marbles, and hand it to a kid. They just shake, rattle, and roll until butter appears!
