Fast. Nutritious. Cheap.

The meal was fast, nutritious, and cheap.  Those three words don't usually go together when talking about real food.

My husband said, "This is awesome."

My son ate every bite.

I loved the meal because it was fast, nutritious and cheap.

The meal?  Eggs Poached in Marinara.  Super simple and delicious.

Basically, open a jar of marinara.  I like to read labels and get a brand that has the least amount of added sugar - no high fructose corn syrup.

Pour marinara into a large saucepan.  Bring it to a boil, reduce to a simmer.

Crack pastured eggs into the saucepan.

Put a lid on the saucepan for 3-5 minutes to steam the eggs.  The time depends on how cooked you like your eggs.

Serve in a bowl.  We sprinkled with cheese and served with buttered toast.

Bonus points if you serve with a green vegetable.  Somedays I feel good just getting something on the table.
